How to Make Stuffed Grape Leaves (Dolmas, Dolmades, Yaprak)

Описание: Stuffed grape leaves with rice (known as dolmas, dolmades or yaprak) are an absolute delicacy and one of my family’s favorite meals. While not difficult to prepare per se, it does require some practice especially with regards to rolling the stuffed grape leaves.

In this video, I will show you how I cook this delicious dolmas/dolmades dish. Follow along, step-by-step, and I’m sure your dolmas will come out great, too.


About Dolmas, Dolmades and Yaprak
Dolmas, in Turkish, Middle Eastern and Greek cuisine, are any of the various stuffed vegetable dishes, though most commonly refers to young leaves of the grapevine stuffed with a lemon-flavored mixture of rice, onion, and frequently ground lamb. Although dolmas are usually eaten cold, Greek dolmades with lamb are served hot with an avgolémono sauce of egg yolks and lemon juice.

The word dolma is of Turkish origin from the word dolmak (to fill). The plural form in Greek is dolmades and this is often used instead of "dolmas". It is also known among Sephardic Jews as “yaprak” or “yaprach”.

The grape leaves can be purchased in many supermarkets and health stores. Alternatively, if you come across them in the wild (as I did in this video), pick nice, big, full and young leaves with no holes. As you will see, the grape leaves I found were not so big, but I was still able to fill them enough to be bite size and scrumptious.
