Krupnik | Barley soup
INGREDIENTS:
4 potatoes
2 carrots
1 parsley
1 onion
5 garlic cloves
2 bay leaves
3 allspice grounds
100g barley grits
1 bundle fresh dill or 3 tablespoons dried
soy sauce and black pepper to taste
oil
METHOD:
1.Peel and dice vegetables besides garlic. Transfer to a pan or baking sheet, add unhulled garlic, bay leaves, allspice, some oil and combine.
2. Heat oven to 180℃ and bake veggies until soft (20-40 minutes, depending on dice size- the smaller dice, the shorter baking time).
3. In the meantime in a big pot boil 2,5 litres of water and add barley (boiling time as in instruction on package).
4. When veggies are ready, pull out garlic, peel it and chop.
5. Add all roasted vegetables to the pot. Cook 2-3 minutes after bringing to a boil.
6. Chop dill if fresh and add it to soup with soy sauce and black pepper.
7. In case of a huge hunger eat with wholewheat bread. ;)
