🔬 𝐏𝐫𝐞𝐩𝐚𝐫𝐚𝐭𝐢𝐨𝐧 𝐨𝐟 𝐃𝐫𝐢𝐞𝐝 𝐕𝐞𝐠𝐞𝐭𝐚𝐛𝐥𝐞𝐬 (𝐏𝐨𝐭𝐚𝐭𝐨𝐞𝐬 & 𝐎𝐤𝐫𝐚)
In our 𝐓𝐞𝐜𝐡𝐧𝐨𝐥𝐨𝐠𝐲 𝐨𝐟 𝐅𝐫𝐮𝐢𝐭𝐬 𝐚𝐧𝐝 𝐕𝐞𝐠𝐞𝐭𝐚𝐛𝐥𝐞𝐬 𝐋𝐚𝐛, we prepared dried potatoes and okra (lady’s finger) by removing moisture to extend their shelf life and preserve quality. 🥔🌿
✅ After washing, slicing, and optional blanching, the vegetables were placed in a dryer overnight at low heat to ensure complete dehydration and crispiness.
✅ Once dried, the crispy vegetables were sealed in poly bags for storage — allowing us to monitor how long they remain fresh without spoilage.
This experiment ties closely with our earlier Blanching and Enzyme Inactivation (Catalase & Peroxidase Test) 🧪, helping us understand how these steps prevent discoloration, texture loss, and microbial spoilage.
