Prep Time: 30 minutes (includes 30 minutes of soaking dal)
Cook time: 20 minutes
Servings: 4-5
Ingredients:
1/2 Cup Moong Dal
1/4 Cup Chana Dal
1/4 Cup Toor Dal
2-3 Tbsp. Oil
2 Tbsp. Vegan Butter (optional, otherwise use oil)
1 Tbsp. Ginger, grated
1 Tbsp. Garlic, minced
1 Green Chili, slivered
1 Cup Tomatoes, diced
1 Cup Onions, diced
1/4 Cup Cilantro, freshly chopped
1 Tsp Cumin Seeds
1 Tsp dried Fenugreek leaves (Kasoori Methi)
1 Tsp Turmeric
1 Tsp Salt
1 Tsp Ginger
1/2 Tsp Garam Masala
1 Clove of Garlic, thinly sliced (optional)
Recipe:
1) Soak the Moong Dal, Chana Dal, and Toor Dal for 30 minutes
2) Pressure cook the dal on high pressure for 6 minutes with 1/2 Tsp Salt, 1/2 Tsp Turmeric Powder, and 1 tsp of Oil.
3) In a wok over medium heat, add the vegan butter and allow it to melt. Add the Ginger and Garlic, and sauté for 30 seconds. Then add the Green chilies, and Cumin Seeds and sauté for another 30 seconds. Then add the Fenugreek leaves. Then add the Onions and allows the onions to sweat. Then add the Red Chili powder, and Turmeric and combine to allow the fat to fully absorb the spices. Then add the Tomatoes, stir and cover with lid for 2-3 minutes to allows the Tomatoes to soften. Look for Oil to separate to confirm the tomatoes are cooked through.
4) Then add the cooked Dal to the wok and combine. Add freshly slices Garlic and cook for 1-2 minutes for the garlic to soften and bring to a boil. Add a little water if needed.
5) After the Dal is boiling, turn off the heat, add the Garam Masala and freshly chopped Cilantro.
6) Serve with Rice, or flatbread such as Roti, Naan, or Paratha.
