It’s pumpkin season, and that means it’s time to fill your kitchen with the warm aroma of cinnamon and baked pumpkin! This soft and moist pumpkin cake is perfect for cozy autumn days — simple, fragrant, and absolutely delicious with a cup of tea or coffee.
Ingredients:
• 3 eggs
• 200 g sugar
• 150 g vegetable oil
• A pinch of salt
• ½ tsp cinnamon
• 1 tsp baking powder
• Zest of half a lemon
• 250–300 g grated pumpkin
• 100 ml milk
• 270–300 g flour (approx.)
• 1 cup chopped nuts.
Instructions:
1. Beat the eggs with sugar until light and fluffy.
2. Add the oil and milk, and mix well.
3. Grate the lemon zest directly into the mixture.
4. Add the grated pumpkin and stir until combined.
5. Sift in the flour, then add the baking powder and cinnamon. Mix gently until smooth.
6. Stir in the chopped nuts.
7. Grease your baking pan with oil and pour in the batter.
8. Bake in a preheated oven at 180–200°C until a toothpick inserted in the center comes out clean.
9. Dust with powdered sugar while still warm and serve.
