Описание: Dilshan and his father showed me the traditional way to collect Toddy, a fermented drink made from the sap of the kithul (කිතුල්) palm. And once this had been collected and store for fermentation, I was able to try toddy for the first time. It is a sweet drink with a slight cidery quality to the smell and flavour. As it is an active fermentation as well, it was still bubbling as I was drinking it, after the 12 hour period of fermentation it is no longer considered drinkable, and is then used in foods or for other products. Definitely a great way to start the day!
