The Strawberry Jam is easy to make as well, no need for store bought with all the added preservatives. Fresh mini strawberry cut outs and you'll be serving these delights to your loved ones in no time.
The mini cakes are tender but sturdy to hold all the jam, which is velvety and not too sweet. They can be made ahead of time and the day of serving just give them a quick dusting of powdered sugar to make them look extra special. Don't forget to top with fresh strawberry hearts.

Pre-heat oven to 350°F - Middle Rack - Flour & Butter molds - 15 min Bake - Yields 12 Mini Hearts
Ingredients:
1/4 C. Coconut Oil, melted & cooled
1 C. Brown Sugar, packed
1 Large Egg
2 t. Vanilla Extract
2 C. All Purpose Flour
1 t. Baking Powder
1/2 t. Baking Soda
1 t. Kosher Salt
3/4 C. Whole Milk
12 Fresh Strawberries for garnish
1/4 C. Powdered Sugar for dusting
Large Bowl: Combine oil, sugar, egg and vanilla. Mix well.
Medium Bowl: Combine flour, baking powder, baking soda and salt. Mix well.
Add half of the flour mixture to the oil/sugar mixture. Combine well.
Add half of the milk. Combine well.
Add remaining flour. Combine well.
Add remaining milk. Combine well.
Place Batter in piping bag or use an ice cream scoop.
Once the molds are filled 3/4 of the way. Tap firmly on counter a couple of times, to reduce air bubbles.
Place in oven for 15 minutes. Let cool in molds for 10 minutes. Remove and place on wire rack to cool completely. Cut center of cake with heart cookie cutter and fill with strawberry jam. Dust with powdered sugar.
Strawberry Jam:
12 oz. Frozen Strawberries
1 C. Granulated White Sugar
1/4 Brown Sugar
1/8 t. Kosher Salt
1/2 Lemon, juiced
Combine all ingredients in a medium saucepan over medium heat. Stir, simmer and reduce by half, About 20 minutes. Let cool. Place in piping bag and fill the mini cake hearts.
