Light, fluffy, & tangy. These lemony muffins taste amazing and simple to bake. If you like it to be more tangy, simply top it off with a lemon glaze.
INGREDIENTS:
3/4 cups (250g) all-purpose flour
1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2/3 cup (135g) caster sugar
2 large eggs
3/4 cup plain yogurt
6 tablespoons (85g) melted butter
zest and juice of one lemon
1/2 teaspoon vanilla extract (optional)
INSTRUCTIONS:
Preheat the oven to 220C degrees.
Sift flour, baking powder, baking soda and salt into a large bowl. Then mix in sugar and lemon zest before setting aside.
In a medium bowl, whisk the eggs, yogurt, melted butter, lemon juice and vanilla extract until it is evenly combined. Pour this into the dry ingredients (large bowl) and stir with a spatula but not over mix.
4. Split the batter evenly into the lined muffin cups/muffin tray (appx 2/3 filled). Bake for 3 minutes and then reduce the oven temperature to 180C and continue to bake for an additional 15-18 minutes. Insert a toothpick into the center of the muffin and it should comes out clean.
5. Cool for 10 minutes before removing from tray and onto a cooling rack.
