How to make soft and fluffy Potato Cheese Bread.
Here's what you'll need:
FILLING:
2 cups boiled potato (400g)
1/4 cup cream or milk (55ml)
1/2 tsp salt (3g)
1/2 tsp white pepper powder (1g)
DOUGH:
1/2 cup milk (120ml)
1 egg
2 tbsp sugar (30g)
1 tsp instant yeast(3g)
1 and ¾ cup all purpose flour (220g) or bread flour
1/2 tsp salt (3g)
3 tbsp melted butter (40ml) unsalted
1 cup shredded mozzarella cheese
EGGWASH:
1 egg
1 tbsp milk
1. In a pot, boil about 400 grams peeled and cubed potato until fork tender. Mash and add cream, salt and pepper. Set aside.
2. In a separate bowl, mix together milk, egg, sugar and yeast. Add flour and salt. Mix until dough is formed. Add melted butter. Knead until smooth and elastic. Cover and let it rise until doubled in size.
3. Punch air out. Transfer to a floured counter. Divide into two equal portions. Cover and bench rest for 10 to 15 minutes. Roll out each dough, place first dough in an 11 inches round pan. Poke a hole at the bottom.
4. Place mashed potato, spread evenly. Place shredded cheese. Roll out second dough and place on top. Pinch edges to seal. Tuck it in to create a clean edges. Poke a hole on top. Let it rest for 15 minutes. Preheat oven this time at 180C/350F.
5. Bake for 20 to 25 minutes or until golden. Brush with melted butter while its hot.
