Pre-Dough Ingredients:
• 20 g fresh yeast
• 30 g granulated sugar (2 1/2 tbsp)
• 1 large egg, room temperature
• 120 ml lukewarm water (1/2 cup)
• 150 g all-purpose flour, sifted (1 cup + 3 tbsp)
Dough Ingredients:
• 500 g all-purpose flour, sifted (4 cups)
• 150 g granulated sugar (3/4 cup)
• 3 large eggs, room temperature
• 2 large yolks, room temperature
• 200 g unsalted butter, softened & cubed (7/8 cup)
• 1 tsp salt (6g)
Aromatics:
• Zest of 1 large orange
• Zest of 1 large lemon
• 1 tbsp vanilla extract (15 ml)
• 1 tbsp orange jam (20 g)
• 1 tbsp honey (20 g)
Inclusions:
• 1 cup raisins (150 g), golden, dark or mixed
• 1 tbsp (15 ml) Marsala or Grand Marnier
Topping:
• 1 large egg yolk
• Granulated sugar, to taste
Greasing:
• softened butter for hands, bowl and mould

Method:
Add the sifted flour (4 cups/500 g), sugar, whole eggs, yolks, and bubbly pre-dough. Mix with the dough hook.
Knead 10 minutes on low-medium speed until the dough wraps the hook. Scrape the sides of the bowl as needed.
Once the dough comes together and wraps around the hook, pause the mixer and scrape the dough off the hook. Spread the dough out and add the aromatic mixture. Knead until fully incorporated, about 10 minutes. Once it wraps around the hook, scrape it off the hook and scrape the sides of the bowl occasionally. Add the softened cubed butter gradually, allowing each piece to fully absorb before adding the next. This will take 15–20 minutes. Pause the mixer occasionally, scrape the dough off the hook and the sides of the bowl. This allows even kneading and prevents the dough from overheating.
Add salt last. Knead another 10 minutes or until the dough passes the windowpane test (pause mixer occasionally to scrape dough off the hook and sides of the bowl).
FIRST RISE
Grease a large bowl with butter. Place dough inside.
Grease fingers with softened butter, fold six times, shape into a ball. Score a cross on top (helps dough rise with ease, encourages higher, more uniform dome).
Cover and let rise in the oven with the light on for 2 to 4 hours, until tripled in size.
SHAPE (ADD THE RAISINS)
Lightly flour work surface.
Let dough fall out on its own.
Grease fingers with softened butter, flatten with fingers into an 18 x 13 inch (45 x 33 cm) rectangle, scatter and press in half of the raisins.
Fold in three, flatten, add remaining half of the raisins.
Fold in three, pinch seams, roll into a log, pinch seams again, roll into a ball.
SECOND RISE
Grease a 9 x 4 inch (23 x 10 cm) round pan. Line bottom with parchment, add a parchment collar extending 2 inches above the rim. Place dough inside.
Rise in the oven with the light on for 2 to 4 hours, until reaching the rim. Do not let rise above the rim.
Brush with egg yolk, sprinkle granulated sugar on top.
BAKE
Bake in preheated 350°F (177°C) oven for 50 to 60 minutes.
Cover quickly with foil after 20-30 minutes.
Test with a skewer at 50 minutes. Skewer should come out clean. If sticky, give the panettone a little more time in the oven.
COOL
Turn off the oven. Let the panettone rest inside for 15 minutes with oven door half open.
Cool for 1 hour on the counter.
Remove from pan, place on a cooling rack. Cover loosely with a clean towel until fully cooled.
STORE
*Tip for softer and more aromatic panettone
Keep in a sealed plastic bag for 1–2 days before serving. This allows the panettone to become softer, moister, more aromatic, similar to store-bought. A small tissue or cloth soaked with Grand Marnier or Rum inside the bag will enhance the aroma and flavor.
SERVE
Slice and enjoy!
Left over panettone can be stored at room temperature in an airtight plastic bag for up to 7 days.
It can also be frozen in an airtight plastic bag for up to 3 months.
