BARLEY KHICHDI

Ingredients

1 cup barley, soaked for 3-4 hours and drained
1 tbsp ghee
1 tsp cumin seeds
A pinch of asafoetida
1 medium carrot, diced
¼ tsp turmeric powder
1 tsp crushed black peppercorns
Sea salt to taste
2 tbsps chopped fresh coriander leaves

Method

1. Heat ghee in a pressure cooker, add cumin seeds, asafoetida, carrot and barley. Mix well and sauté for 2-3 minutes.
2. Add turmeric powder and crushed peppercorns and mix. Add coriander leaves and 2 ½ cups water and mix and let it come to a boil. Add salt and mix well. Put the lid on and cook under pressure for 2-3 whistles.
3. Open the lid when the pressure reduces completely and serve hot.
