Recipe of gluten free macadamia and cashew nuts tart
To make crust
2 cups of almond flour
1 large egg yolk
1/8 tsp of baking powder
1 tsp vanilla essence
2 tbsp of sugar
2 1/2 tbsp of chilled water
3 tbsp of unsalted cold butter
To make filling for tart
1/2 cup finely ground raw cashews nut
1/2 cup finely ground macadamia nuts better to use raw
1 tbsp of unsalted butter
1/8 tsp of cinnamon powder
2 1/2 tbsp of sugar
Mixture of 2 tbsp water with 1 tbsp of cornflour
Some cashew & macadamia to decorate it
7 inches round tart pan
Method
First finely ground both nuts
In mixing bowl add 2 cups of almond flour, egg yolk and 3 tbsp of butter, mix them with a whisk for 30 seconds then add sugar, baking powder and vanilla essence, mix them for another 30 seconds. Now add chilled water slowly in it to form the dough. Keep the speed medium high for 1 minute until you get soft dough to make crust. Place the dough in tart pan and make the shape of tart crust by using your fingertips. Keep this crust in fridge for 10 minutes to set. Meanwhile preheat oven at 350°F for 15 minutes and make filling for tart.
In a pan add 1 tbs of butter and melt it on medium high flame then add finely ground nuts, sugar and cinnamon powder, keep the flame medium low and cook it for 1 minute then add mixture of water and cornflour. Stir it quickly, filling will be thicken up in 4,5 seconds, pour it in prepared tart crust and decorate it with macadamia and cashew nuts, bake it in preheated oven for 35 minutes. A delicious and delicate gluten free macadamia and cashew nut tart is ready to enjoy inshaAllah.
