Chocolate Sauce:
Dark Chocolate 100g
Hot Whipping Cream (70°C) 100g
Daifuku Skin:
Glutinous Rice Flour 100g
Cornstarch 30g
Granulated Sugar 30g
Cocoa Powder 10g
Milk 180g
Butter 15g
Whipping Cream 250g
Glaze:
Dark Chocolate 100g
Coconut Oil 30g
Crushed Peanuts 30g
1 Stir the dark chocolate and 70°C hot cream until well combined, then refrigerate to set.
2 To make the mochi skin, add glutinous rice flour, cornstarch, sugar, cocoa powder, and milk into a mixing bowl. Stir well, then sift through a fine mesh. Cover with plastic wrap, poke a few holes, and steam for 30 minutes. After steaming, add butter while still hot, knead well, and stretch repeatedly until the dough is elastic.
3 Whip the filling cream by combining heavy cream and cooled chocolate sauce. Whip to 90% stiff peaks.
4 Divide the dough into 35g portions. Dust with toasted flour to prevent sticking, then roll out into skins. Place them into molds, add a layer of cream, followed by chocolate crisp pearls, then another layer of cream. Wrap up and freeze for later use.
5 To make the chocolate glaze, combine dark chocolate and coconut oil in a bowl and melt over a double boiler. Add crushed peanuts and stir until evenly mixed. Cool to 35°C, then pour over the mochi.
