In this dish, we use fresh homemade pasta to form our manicotti. The fresh pasta combined with delicious cheese filling makes this a meal to die for. It is really easy to prepare and assemble and we are sure it will quickly become a family favorite for you.

Homemade Manicotti
(Makes 15 pieces)
Ingredients
Pasta shells, homemade or store bought 12-15
Marinara Sauce or sauce of your choice
1 cup grated cheese
3 cups shredded mozzarella ( 2 cups for filling, one cup reserved for topping)
1/2 tsp black pepper
1/4 tsp salt
2 lbs whole milk ricotta
2 eggs
1/4 cup fresh chopped parsley
1/2 tsp granulated garlic (optional)
Directions
Cook fresh pasta sheets for 2-3 minutes or store bought manicotti shells according to package directions. drain and dry on paper towel.
Mix the ricotta, grated cheese, shredded cheese, parsley, salt ,pepper, garlic and eggs in a large bowl.
Spread the marinara sauce on the bottom of 13x9 pan
Spread about ⅓ cup or more of ricotta filling on pastry sheet and roll it up or if using boxed manicotti, fill with a pastry bag or spoon.
Fill the tray with one layer of manicotti.
Cover with additional sauce and prinkle a little grated cheese on top.
Bake 30-40 minutes at 350 degrees uncovered till it starts to bubble on sides.
Add 1cup shredded mozzarella on top and bake another 10 minutes till melted.
