Mexican Lasagna
1 1/2 lbs ground beef
8 oz ricotta cheese
10 oz Monterrey Jack cheese grated
2 eggs beaten
1 teaspoon seasoned salt
1 pkg taco seasoning
1 cup diced tomatoes
4 oz green chiles diced
Corn tortillas
Preheat oven to 350
Brown ground beef and drain fat, add seasoned salt, taco seasoning, tomatoes and chilies. Stir to combine. Simmer for 10 minutes.
Combine ricotta cheese and eggs.
In a 13x9 casserole, layer 1/2 the meat mixture, followed by tortillas, 1/2 the the ricotta egg mixture and 1/2 the grated Jack cheese. Repeat the layering process, ending with cheese.
Bake at 350 for 25-30 minutes
