Homemade Banh Tet — Bánh Tét nhà làm. Steam & Wrap with Banana leaf or Parchment paper & Foil.
All of these ingredients for Banh Tet need to be prepared one day in advance before being mixed and rolled together. 1 &1/2 hours of Steamed.
Noted on the glutinous rice & the split yellow mung beans: you need to wash until the water is clear. Next, soak in cold water over night. Then, pour into a draining bowl.
Day 1
Prep-Ingredients:
La chuoi—banana leafs ( wash it with hot water then dry).
Soaked 6 cups long-grain sticky rice/glutinous rice (soaked overnight).
Soak 2 cups dried, split yellow mung beans (soaked overnight).
1 pounds Pork Belly is seasoned with little fish sauce, seasoning, mince shallot, black pepper and sugar.
Day 2
Prepare to Wrap & Cook
Dây—Strings (tie it with a string).
Parchment paper & Foil (need it when out of banana leaf).
Half cooked the mung beans with some water. (Add 2 spoons of sugars & little salt.)
Then wrap it around the pork belly with plastic wrap. Set aside
Blend some pandan leaves with 1 cup of water; drains & mix with 1 can coco juice (12 ounce) with 2 spn sugar & a pinch of salt. (add some water to make it to 3 cups)
Half cooked the glutinous rices with 3 cups of pandan juice & coco juices. (Add 2 spoons of sugars & little salt.)
Wrapping:
3 layers of banana leaf
Spread the Half cooked the glutinous rices over.
Put Half cooked the mung beans with pork belly in the middle.
Top with some Half cooked the glutinous rices over.
Then, wrap it in a round shape & tie it with a String.
Set aside
Steaming: 1 & 1/2 hours (switched the trays in 45mins).
Cool it down by air dry the next day then plastic wrap with a red envelope.
