Bengali Coconut Filling with Date Palm Jaggery (Narkel-er Pur with Khejur Gur)
This is a classic Bengali sweet filling used in patisapta, dudh puli, bhapa pitha, chandrapuli, and stuffed sweets.
Ingredients
Fresh grated coconut – 2 cups
Date palm jaggery (khejur gur), grated or chopped – ¾ to 1 cup (to taste)
Green cardamom powder – ½ tsp
Milk - 1/2 cup
Sugar - 100 grm
Method
Heat a pan on low to medium flame and add the grated coconut.
Stir for 2–3 minutes to remove excess moisture (do not brown).
Add the date palm jaggery and sugar. Keep stirring on low heat.
The jaggery and sugar will melt and coat the coconut evenly.
Cook until the mixture thickens and starts leaving the sides of the pan.
Add cardamom powder..Mix well.
Turn off the heat and let it cool—your filling is ready.
