HOW TO MAKE: SAUTEED FRESH CHILLI PASTE (RECIPE)
Ingredients :
(A)
10 fresh red chillies (remove the seeds)
4 red chilli padi / bird’s eye chilli
1 large red onion
4 cloves of garlic
1” fresh ginger
1 tsp turmeric powder
1 tsp salt
2 tbsp oil
150ml water
(B)
2 lemongrass, crushed
4-5 kaffir lime leaves
2 tsp sugar
1 tsp vegetable seasoning powder/granule (Optional)
Oil for cooking
Method:
1. Put in all the (A) ingredients into a blender and blend it to a paste.
2. Then, heat up a non-stick pan over medium low flame, pour in some oil and add in (B) the lemongrass, kaffir lime leaves and blended chilli paste.
3. Allow it to cook for about 25-30 minutes on low flame. In between, do check and keep stirring as not to burn the mixture.
4. Add more oil if needed. Once the raw smell goes off and oil begins to separate, add in the sugar and vegetable seasoning. Turn off the flame and allow it to cool.
5. Transfer it to a jar and refrigerate it. It can last for a week. This can be used as a sambal base for any seafood or chicken dish. Enjoy:)
