🌟 Recipe and Ingredients - First take some Chironji, Cashew, Almond and Pistachio , mix some amount of Khoya, add Cardemom powder and few drops of edible Kesariya food colour, Your stuffing is ready for Mawa Batti ! On one side of gas, Add 1 Kg and 250 gram of Sugar in a Kadai, mix 1 big bowl of water. Add some saffron threads and cardemom powder for good taste and essence. Boil it untill sugar gets melt to make a sugar syrup. We don't have to make a thick or any string syrup ! Just put off the flame when sugar gets melt and a sticky thin syrup is ready ! We are taking all ingredient quantity according to 1 Kg of Khoya which we will use to make Mawabaati.
Take 1 Kg of Yellow special Mawa (Khoya) which is used to make Gulabjamun usually. You can also take White Khoya. Churn it well using palm of hand so that it can release its natural ghee. Churning makes the Khoya soft and cracks free. Add 250 gram of grated fresh paneer in it and mix it well as shown in video. For Binding, add Maida (all purpose flour) and mix it well. First we have taken 6 spoon full of Maida then we have added 2 more, if your Khoya is super soft add more Maida or if it is tight add drops of milk to make a smooth soft crack free dough for making Mawa baati just process as Gulabjamun. Make balls of this dough bigger then Gulabjamun, stuff small balls of stuffing which we have made in starting, inside this ball as shown in video. Flat it little bit.. Now Take Ghee and deep fry this Mawa baati untill it gets golden brown texture fully. First make the ghee hot, and then on low medium flame, in moderately hot ghee deep fry all mawa baatis so that they can be fried properly from inside also. You can also fry it in oil but Sweets give good taste in Ghee. Dip this Mawa baatis in sygar syrup for 1 to 2 hours. Your tasty , mouth watering, Madhya Pradesh's famous sweet Mawa baati is ready ! It is is bigger version of Gulab jamun, just a difference is its bigger in size and has a dryfruit stuffing inside it !
