Recipe: Strawberry Cheesecake Dump Cake
Ingredients:
1 box (15.25 oz) yellow or white cake mix, divided
½ cup (1 stick) cold unsalted butter, cut into small cubes
1 large egg
1 package (8 oz) cream cheese, softened
½ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 can (21 oz) strawberry pie filling
Whipped cream and fresh strawberries, for serving
Clean and wash your hands
Instructions:
Prepare Oven and Pan: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan.
Make the Crust: In a medium bowl, combine the dry yellow cake mix, the cold butter cubes, and the 1 large egg. Use a pastry blender or your fingertips to mix until a crumbly dough forms.
Form the Crust: Reserve about 1 cup of the crumbly mixture for the topping. Press the rest of the mixture firmly and evenly into the bottom of the prepared pan.
Make the Cheesecake Filling: In a large bowl, use an electric mixer to beat the softened cream cheese and granulated sugar on medium speed until completely smooth. Beat in the 2 eggs and the vanilla extract until just combined.
Assemble the Layers: Pour the cheesecake filling evenly over the crust.
Add Strawberries and Topping: Spoon the strawberry pie filling evenly over the cheesecake layer. Sprinkle the reserved 1 cup of crumb mixture over the top.
Bake: Bake for 40-50 minutes, or until the edges are set and lightly browned, and the center is almost set (it will still have a slight jiggle).
Cool Completely (Crucial Step): Let the cake cool completely in the pan on a wire rack for at least 2 hours.
Chill and Serve: For the best results and cleanest cuts, cover the cooled cake and chill in the refrigerator for at least 4 more hours, or overnight. Serve cold, topped with a generous dollop of whipped cream and a fresh strawberry.
Additional Notes:
The long cooling and chilling process is crucial. Do not skip it, as the cheesecake layer needs this time to set up properly for slicing.
Because of the cream cheese filling, this dessert must be stored in the refrigerator.
Feel free to use other fruit pie fillings like cherry or blueberry for a different flavor.
