Village Style Beans & Potato Curry with Ghee Paratha | देसी बीन्स आलू की सब्ज़ी और घी पराठा
Ingredients / सामग्री:
Beans (बीन्स) – 300 grams (washed & broken)
Potato (आलू) – 3 medium-sized (peeled & chopped)
Fresh Coriander Leaves (हरा धनिया) – 1 cup (chopped)
Green Chilli (हरी मिर्च) – 3 (chopped)
Mustard Seeds (सरसों के दाने) – 1 tsp
Cumin Seeds (जीरा) – 1 tsp
Asafoetida (हींग) – 1 pinch
Garlic (लहसुन) – 7-8 cloves (peeled & ground)
Cooking Oil (तेल) – 3 tbsp
Salt (नमक) – as per taste
Wheat Flour (गेहूं का आटा) – 2 cups (for paratha)
Ghee (घी) – as required (for paratha)
Procedure / बनाने की विधि:
Step 1 – Prepare Beans & Potatoes:
Wash and break beans into small pieces.
Peel and cut potatoes into medium pieces.
Step 2 – Make Masala Paste:
On a grinding stone, grind fresh coriander, green chillies, garlic, and roasted mustard seeds into a paste.
Keep aside.
Step 3 – Cook Beans Curry:
Heat oil in a kadhai, add cumin seeds and a pinch of asafoetida.
Add potatoes and beans, mix well, cover, and cook on medium-low flame for 5 minutes (no water added).
Add the prepared coriander-garlic paste and mix.
Cover and cook for another 5-6 minutes until potatoes and beans are soft and well-cooked.
Garnish with chopped fresh coriander leaves.
Step 4 – Prepare Ghee Paratha:
Knead wheat flour dough (thick consistency).
Roll into round or triangular shapes.
Heat tawa, place the paratha, cook lightly on one side, flip, and apply ghee.
Cook until golden brown and puffed.
Serving Suggestion:
Serve hot beans & potato curry with ghee parathas, chilli pickle, fresh salad, and enjoy a wholesome desi village-style meal.
