These delightful lemon bars feature a buttery, crumbly shortbread base and topping with a tangy and sweet homemade lemon curd filling. They are the perfect balance of sweet and tart, making them a refreshing treat for any occasion.

🛒 INGREDIENTS
*for a 12x8-inch baking pan (around 12 bars)*:
✅ For the Shortbread Crust/Topping:
▪️ +/- 400g all-purpose flour
▪️ 10g baking powder
▪️ A pinch of salt
▪️ 120g sugar
▪️ 8g vanilla sugar (or 1 tsp vanilla extract)
▪️ Zest from 6 medium lemons
▪️ 2 medium eggs
▪️ 180g softened butter
▪️ 1tbsp powdered sugar, for dusting
✅ For the Lemon Filling:
▪️ 6 medium lemons, juiced (you should have about 1 cup of juice)
▪️ 250g sugar (or to taste)
▪️ 30g cornstarch
📝 INSTRUCTIONS:
1️⃣ Prep: Preheat your oven to 350°F (180°C). Line the pan with parchment paper or grease with butter/oil.
2️⃣ Zest the lemons, being careful not to include the bitter white pith. Mix the zest with the sugar for the shortbread and set it aside for a while to allow the flavors to meld.
3️⃣ Prepare the Lemon Filling:
▪️ Juice the zested lemons. Strain the juice to remove any seeds and pulp.
▪️ Pour the lemon juice into a saucepan. Add the sugar and cornstarch. Whisk well until smooth.
▪️ Place the saucepan over medium heat. Bring the mixture to a boil, whisking constantly. Once it boils and thickens, continue to cook for 1 more minute.
▪️ Remove from the heat and let it cool slightly.
4️⃣ Prepare the Shortbread Dough:
▪️ In a large bowl, whisk together the dry ingredients: sifted flour, baking powder, salt, vanilla sugar, and the sugar-lemon zest mixture.
▪️ Add the softened butter and work it into the dry ingredients with a fork or your fingertips until the mixture resembles coarse crumbs.
▪️ Add the eggs and work them into the mixture until it forms a crumbly dough again.
5️⃣ Assemble and Bake:
▪️ Press half of the crumbly dough mixture firmly into the bottom of your baking pan to form an even base.
▪️ Spread the slightly cooled lemon filling evenly over the base.
▪️ Sprinkle the remaining crumbly dough evenly over the lemon layer.
▪️ Bake for 40-50 minutes, or until the top is golden brown. Baking time may vary depending on your oven.
▪️ Allow the lemon bars to cool completely in the pan.
▪️ Once cool, remove from the pan, dust with powdered sugar, and cut into squares.
