Omurice with Japanese Ketchup Chicken Fried Rice | Midnight Diner Recipe

Japanese chicken fried rice is a fusion fried rice with two western components: ketchup and butter. I grew up eating it in South Korea where the Japanese style western fusion dishes were everywhere at cafe and bistros. It was more of an everyday meal really. It wasn't until I lived in the US for a while when I realized that it was kind of weird and cool. This chicken fried rice was featured in Midnight Diner Tokyo Stories. This chicken rice recipe is pretty much what that dish from the show would have tasted like. There is also an omurice episode in Midnight Diner. This recipe is not that omurice episode recipe as it has slices of ham and other stuff whereas this recipe is based on chicken fried rice. I did create a blanket of omelet to cover this fried rice to turn into omurice. This is not one of those fancy crazy exploding omurice, which is really really difficult to create but this is the version most people eat at home.
Ingredients:
1 chicken thigh
1 cup cold rice (medium grain white rice)
2 tbsp frozen green peas
3 mushrooms
1/2 onion
1 tbsp unsalted better
pinch of salt & pepper
Sauce:
3 tbsp ketchup
3 tbsp tomato sauce
1 tsp Worchestershire sauce
Omurice:
2 eggs
1 tbsp heavy cream
pinch of salt
