Pronounced: le /coop/.
French for “the cut”, sounds like a home for tasty chickens, something you order when you’re feeling all cooped up.
Used in a sentence, “Fried, frenched, and flavorful – nobody does chicken like Le Coupé”.
All Couped Up
Born and raised in South Louisiana, Chef Craig Walker's passion for cooking was ignited by the eccentric atmosphere of his family kitchen, where cooking and eating was only half of the meal. After graduating at the top of his class from Le Cordon Bleu Culinary Institute in Austin, TX, Walker pursued his fascination of international cuisine to Palm Beach, FL, where he trained and honed his skills at Cafe L' Europe working alongside internationally recognized Chefs for several years later. Walker returned to his Louisiana roots a true culinary expert and opened up two of his own restaurants in New Orleans.
After several years of success, Walker decided to take a leap from ownership and continue in the culinary world as an Executive Chef at a new concept called 7908 Supper Club, in Aspen, CO. After designing, organizing and launching the Supper Club into one of the top-rated culinary establishments in Colorado, Walker decided to transition his focus on providing individual clients with a unique culinary experience that blends the excitement of cooking with and intimate educational presentation. Chef Craig took this as an opportunity to showcases his talents by creating private dining experiences for various clientele as well as offering cooking lessons to individuals or groups.
During the Covid-19 Pandemic, as no one was able to gather for social events, cooking lessons, or dinner parties, Craig saw an opportunity to engineer restaurant-style food into a quality take out dining experience. In the past, the restaurant industry was focused on a sit-down experience that allowed you to take food to go, but by the time you were ready to eat at home, the food was never as the chef intended it to look or taste.
Chef Craig is not only serving gourmet takeout food, but he is making sure it is packaged and transported for you to have the optimal dining experience in your home. The name Le Coupé came about in a few ways… aside from being all cooped up from quarantine when this began, the name Le Coupé in French translates to “The Cut”. The cut of Chef Craig’s Fried chicken thigh is what makes his fried chicken unique. He used a technique that frenches the meat off the bone allowing for a unique look and flavor profile and aesthetic.
