In just a few minutes, you can prepare healthy Southekayi or Cucumber Sasive / Sasmi that goes well with plain Rice. This is quite popular in the Udupi Mangalore region and is often prepared for family functions as well.

Ingredients :
Grated Coconut - 1/2 Cup
Green Chillies - 2
Mustard Seeds - 1/4 tsp
Cumin Seeds - 1/4 tsp
Salt - 1 tsp
Cucumber - 3 (Chopped)
Thick Curd - 2 and 1/2 Ladlefuls
Coriander Leaves - 1 Tbsp
Seasoning Ingredients:
Ghee/Clarified Butter - 1 tsp
Mustard Seeds - 1/2 tsp
Urad Dal/White Lentils - 1/4 tsp
Curry Leaves - 4-5
Method:
1. Add 1/2 Cup of grated Coconut to the mixer jar. Add 2 Green Chillies, 1/4 tsp Mustard Seeds, 1/4 tsp Cumin Seeds, 1 tsp Salt and add a little water and grind to a smooth paste.
2. Add the chopped Cucumber to a mixing bowl. Add the ground paste. Add 2 and 1/2 ladlefuls of thick Curd and 1 tbsp of Coriander Leaves. Mix everything well.
3. We have to do the seasoning for this Sasmi.
4. Add 1 tsp of Ghee/Clarified Butter to a small frying pan. Once the Ghee is hot, add 1/2 tsp Mustard Seeds. Once the Mustard Seeds splutter, add 1/4 tsp of Urad Dal/White Lentils. Add 4-5 Curry Leaves. Once the curry leaves are roasted, add this seasoning immediately to the Cucumber Sasmi/Sasive.
This Cucumber Sasmi/Sasive pairs well with rice.
