Receipe of Bhajiya :- Besan Methi Bhajiya, or Gram Flour and Fenugreek Fritters, is a delightful and flavorful snack popular in Indian cuisine. Here's a recipe to make Besan Methi Bhajiya at home:
Ingredients:
1 cup chickpea flour (besan)
1/2 cup fresh fenugreek leaves (methi), washed and finely chopped
1 medium-sized onion, finely chopped
2-3 green chilies, finely chopped (adjust to taste)
1/2 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
Salt to taste
1/2 teaspoon baking soda
Water, as needed
Oil for deep frying
Instructions:
In a large mixing bowl, combine chickpea flour, chopped fenugreek leaves, chopped onion, chopped green chilies, cumin seeds, turmeric powder, red chili powder, and salt. Mix well to combine all the ingredients.
Gradually add water to the mixture, a little at a time, and mix to form a thick batter. The batter should be thick enough to coat the back of a spoon.
Let the batter rest for about 10-15 minutes to allow the flavors to meld together.
After resting, check the consistency of the batter. If it has become too thick, add a little more water and mix well. If it's too thin, add a little more chickpea flour to adjust.
Heat oil in a deep frying pan or kadhai over medium heat.
Once the oil is hot, add baking soda to the batter and mix well. This will help make the bhajiyas light and airy.
Using a spoon or your fingers, carefully drop spoonfuls of the batter into the hot oil. Fry the bhajiyas in batches, making sure not to overcrowd the pan.
Fry the bhajiyas until they turn golden brown and crispy on all sides, stirring occasionally to ensure even cooking.
Once done, use a slotted spoon to remove the fried bhajiyas from the oil and drain them on paper towels to remove excess oil.
Serve the hot and crispy Besan Methi Bhajiya immediately with green chutney, tamarind chutney, or ketchup for dipping.
