Pumpkin in coconut milk is a delicious pumpkin recipe cooked in coconut milk. In Malay, it is called Labu Manis Masak Lemak. This is an Indian version of the dish where birds’ eye chillies are not used, but they can be added for a more spicy gravy. Ingredients
300g pumpkin, skin removed, cut into small pieces
1/2 tsp mustard seeds
1/2 big red onion, chopped
2 cloves garlic, chopped
1 red chilli, sliced
1 tsp salt (or to taste)
1/2 tsp turmeric powder
1 /4 tsp white pepper powder
2 sprigs curry leaves
2 cups thin coconut milk (if using canned coconut milk, dilute 1:4)
2 cups thick coconut milk (if using canned coconut milk, dilute 1:2)
1 tbsp vegetable oil
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Servings: 4-5
Bahan-Bahan
300g labu manis, buang kuit, potong kecil
1/2 st biji sawi
1/2 biji bawang besar, dicincang
2 ulas bawang putih, dicincang
1 tangkai cili merah, dihiris
1 st garam (ikut rasa)
1/2 st serbuk kunyit
1/4 st serbuk lada sulah
2 tangkai daun kari
2 cawan santan cair (jika menggunakan santan peket, cairkan1:4)
2 cawan santan pekat (jika menggunakan santan peket, cairkan1:2)
1 sb minyak sayuran
