Chicken Farcha or Marghi na Farcha (Parsi recipes)
This is the famous Parsi Fried Chicken. Juicy and yummy. A total hit with all ages.
Ingredients
500 gms Chicken legs ( Bone in and skin off)
1 cup fresh coriander
5 mint leaves
2 green chillies
1 tea spoon ginger garlic paste
1 table spoon lemon juice
1 tea spoon coriander powder
1/2 tea spoon cumin powder
1/4 tea spoon turmeric powder
1/2 tea spoon garam masala powder
1 tea spoon salt
2 eggs
1 cup flour( seasoned with salt and pepper)
Oil for frying
Method
Grind to paste fresh coriander, mint leaves, green chillies, ginger garlic paste, lemon juice, coriander powder, cumin powder, turmeric powder, garam masala powder and salt. Keep Aside.
Wash the chicken legs and score them with a knife
Add the coriander chilli paste to the chicken legs and marinate them for 30 minutes
Heat a pan and add 2 table spoons oil
Add the marinated chicken to the pan and cook for a minute
Add a 1/4 glass of water and cover and cook the chicken turning once or twice
Remove off the heat and keep aside to cool
Take 2 shallow dishes
Add 2 eggs in one dish with salt to taste, whisk the eggs
Add 1 cup flour in another dish with salt and pepper powder to season the flour
Put a good amount of oil in a pan and set in to heat for frying the chicken
Take the cooked chicken set aside
Dip the chicken in the flour, coat it well and then dip it in the egg
Fry the chicken until golden brown
