To make Mathri, we need:
Ingredients:
2 cups all purpose flour
1/4th cup fine semolina
1 Tsp onion seeds (kalonji)
1 Tsp carom seeds (ajwain)
1 Tbsp crushed kasuri methi
1 Tsp crushed peppercorns
Salt to taste
A pinch of asafoetida (heeng)
A pinch of baking soda
1/4th cup hot ghee
Water as required (as little as possible)
Refined oil for frying
Whole-wheat Jaggery Cookies:
Prep time: 25 minutes
Bake time: 10 minutes for each batch
Yields 20-21cookies
To make Whole Wheat Jaggery Cookies, we need:
Ingredients:
1.5 cups whole wheat flour
1/4th Tsp cinnamon powder
1/4th Tsp nutmeg powder
Pinch of salt
1/2 Tsp baking powder
3 Tbsp chopped cashew nuts
3/4th cup jaggery powder
1/2 cup ghee
1.5 - 2 Tbsp milk
Mini Samosas:
Prep time: 1 hour
Cook time: 15 minutes
Yields 16 samosas
To make Mini Moong Dal Samosa, we need:
Ingredients:
For dough:
3/4th cup all purpose flour
3/4th Tsp semolina
1/4th Tsp carom seeds
salt to taste
1.5 Tbsp refined oil
2 Tbsp water
For filling:
1 Tsp coriander seeds
1 Tsp fennel seeds
1/2 Tsp cumin seeds
8-10 peppercorns
1/4th cup yellow moong dal
1/2 inch ginger
1 small green chilli
2 Tbsp refined oil
A pinch of asafoetida
1/4th Tsp garam masala powder
1/4th Tsp red chilli powder
1/4th Tsp dry mango powder
1/4th Tsp chaat masala
1/4th Tsp turmeric
Salt to taste
For frying:
Refined oil
Other ingredients:
Little bit of water
Little bit of all purpose flour
