Marble Cookies
Yields: approximately 30 cookies
Ingredients:

unsalted butter 125g (½ cup + 2 tsp)
Oil 40ml (3tbsp approx)
Icing sugar 120g (1 cup)
Vanilla extract ½ tsp
Oil 1 tbsp
water 1 tbsp
baking powder 1 tsp
Flour 260g (2 cups)
Corn starch 16g (2 tbsp)
Cocoa Powder 1 ½ tbsp ( ⅛ cup)
Unsalted Pistachio (chopped) 2 tbsp
Chocolate (melted) 50g (⅛ cup)

Bake at 170'C for 15 - 18 minutes
