Ingredients
Kadhi Base
1½ cup yogurt,3 cups water,4 tbsp gram flour,½ tsp crushed ajwain
Masala
1 tbsp mustard oil,1 tsp cumin seeds,4-5 spring onion heads (sliced),2 tbsp ginger-garlic-onion paste,1 tsp red chili powder
tsp red chili powder,1 tsp turmeric,Bathua leaves (washed, chopped),Salt,1 tsp chili flakes
Pakodi
½ cup gram flour,1 onion (chopped),1 green chili (chopped),Coriander,1 tsp red chili powder,½ tsp turmeric,½ tsp cumin seeds,Salt,
Water (for thick batter)
Tadka
½ cup mustard oil,½ tsp cumin,½ tsp mustard seeds,½ tsp nigella seeds,3-4 whole red chilies,1 small onion (sliced),1 green chili (sliced),Fresh coriander
Method
Kadhi Base:
Whisk yogurt + water + besan + ajwain until smooth. Set aside.
Masala:
Heat mustard oil → add cumin, spring onion, paste, chili powder, turmeric, and bathua. Sauté. Cook Kadhi Turn flame OFF + pour yogurt-besan mix.Turn flame ON + stir till 1 boil.Add salt, chili flakes → cook 35-40 mins on low.Add salt, chili flakes → cook 35-40 mins on low.
Pakodi:
Mix all ingredients + thick batter + fry till golden.
Combine:
Add pakodi to kadhi + rest 5-10 mins.
Tadka:
Heat mustard oil + add spices, onion & green chili.Pour on kadhi + garnish with coriander.
