For those who like their salads a little naughty — smoky, honey-drizzled, and unapologetically lush.
Serves: 4
My kind of salad, sticky, and irresistible — the kind of salad that struts straight off the plate.
Ingredients
6 ripe peaches, halved and pitted (or large wedges if preferred)
12 rashers streaky bacon (enough to wrap each peach piece snugly)
1 tablespoon olive oil
1 tablespoon butter
2 tablespoons runny honey
1 tablespoon balsamic or apple cider vinegar
100 grams soft goat’s cheese, crumbled
½ cup toasted pecans or walnuts, roughly chopped
Mixed baby leaves — rocket, spinach, and watercress
Freshly ground black pepper
Optional: a few fresh thyme leaves or mint sprigs for garnish
Method
1. Cut the peaches into halves or thick wedges. Wrap each piece
tightly in a strip of bacon and secure the ends underneath so they stay
put.
2. Heat olive oil and butter in a pan over medium-high heat. Add the
bacon-wrapped peaches and sear on all sides until the bacon is golden and
just starting to crisp.
3.Transfer to a baking dish and drizzle lightly with honey. Roast in
a preheated oven at 190°C for about 10–12 minutes, until the bacon is
crisp and the peaches are soft and glistening.
4.While still warm, drizzle with a touch more honey and a splash of
balsamic vinegar. Let it bubble slightly in the hot pan to coat the
peaches beautifully.
5. Arrange baby leaves on a platter. Nestle the warm bacon-wrapped
peaches among the greens, crumble over goat’s cheese, and scatter toasted
nuts. Spoon over any pan juices as a Tip
Add a few slices of grilled ciabatta on the side to mop up every
sticky, sweet, smoky drop.
