Step 1 — Onions & Chicken
First, sauté onions until they are golden brown.
Then add the chicken and cook it for a few minutes until it starts to change color.
Step 2 — Ginger-Garlic Paste
Add ginger-garlic paste and fry with the chicken for a couple of minutes until fragrant.
Step 3 — Potatoes
Add potatoes and fry for 2–3 minutes. Potatoes give a lovely texture and flavor to the biryani.
Step 4 — Spices
Now add all the spices you told me:
Salt
Black pepper
Red chili powder
Turmeric powder
Cumin powder
Coriander powder
3 cloves
2 cinnamon sticks
2 bay leaves
Biryani masala (2 tb )
Sauté well so the spices coat the chicken and potatoes.
Step 5 — Yogurt & Tomatoes
Add yogurt, fry until the oil separates, then add three tomatoes and cook until a rich gravy forms. Cover and let it simmer for a few minutes.
🍚 Rice Preparation (3 cups)
I soaked 3 cups rice for 3–4 hours so they cooked quickly.
Boil the rice for 3–4 minutes until they are about 80% done, then drain.
Quick tip if you soaked rice only briefly (15 minutes):
Add extra water while boiling; in 4–5 minutes the rice will reach 80% doneness without breaking.
If soaked 3–4 hours: for 3 cups rice use 5 cups water, boil 3–4 minutes, then drain.
🥘 Layering & Dum
1. Add a layer of chicken gravy at the bottom of your pot.
2. Add a layer of drained rice on top.
3. Garnish with: fried onions, fresh coriander, lemon slices, and a few spots of yellow food color (optional).
Cover and cook on dum (steam) for 10 minutes.
Because the masala and chicken are pre-fried well, the biryani finishes quickly and tastes rich.
✅ Final
This method makes Chicken Aloo Dum Biryani that’s flavorful and can be ready quickly — about 30 minutes if ingredients are prepped.
