Easy Loaf -
4 cups (450g) Whole Wheat Flour
2 cups total (500 ml) Warm Water
1 Packet (~10g) Instant Yeast
2 tsp Maple Syrup
1/2 tsp Salt
1. Mix yeast, maple syrup, and warm water in a bowl and let sit for 5-10 minutes.
2. Mix salt and flour in bowl.
3. Add yeast water and another 1.5 cups of water and mix and knead thoroughly.
4. Let it sit covered at room temp for 20 minutes. Preheat to 400 F or 205 C.
5. Place loaf on baking sheet with parchment paper or a silicon baking mat and bake for 40 minutes.

Fancy Loaf -
1 cup whole wheat sourdough starter
3 cups flour
1/2 tsp salt
1 1/2 cups warm water
1/2 cup goji berries
1/2 cup walnuts
1 tbsp fennel
Sprinkle of Poppy seeds
Handful of rolled oats
1. Mix starter, warm water, goji berries, and fennel. Stir and wait 5 minutes.
2. Mix flour, salt, and chopped walnuts.
3. Knead for 5 minutes, cover.
4. Let sit for 20 minutes, knead, cover and let sit for 60 minutes.
5. Place on tray and bake for 40 minutes at 275 F (190 C).
Gluten Free Loaf -
2 cups cassava flour
1 cup buckwheat flour
2 cup almond flour
2 tsp maple syrup
1/2 tsp salt
1 cup plant milk
1 cup water
1. Mix yeast, maple syrup, and warm water in a bowl and let sit for 5-10 minutes.
2. Mix dry ingredients and then add yeast water, 1 cup plant milk, and 1/2 cup water.
3. Knead thoroughly for 5 minutes.
4. Let sit for 60 minutes and preheat at 375 F (190 C).
5. Place on non-stick tray and bake for 40 minutes.
6. Cry because it isn't that good.
Sourdough Starter -
Day 1: Mix 3.5 tbsp whole wheat with 0.25 cups juice. Cover and set aside at room temp and stir vigorously 2-3 times over they day.
Day 2: Stir 2-3 times.
Day 3: Add 2 tbsp of flour and 2 tbsp juice. Continue stir schedule.
Day 4: Continue stir schedule.
Day 5: Add 5 tbsp flour, 3 tbsp water.
Day 6: Add 0.5 cup flour and 0.25-0.33 cups non-chlorinated water.
