Mutton curry is a delicious and flavorful dish made with tender pieces of mutton (goat or lamb) cooked in a rich, aromatic gravy. Here’s a simple recipe to prepare it:
Ingredients:
For Marination:
500g mutton (goat or lamb), cut into pieces
½ cup yogurt
1 tsp turmeric powder
1 tbsp ginger-garlic paste
1 tsp salt
1 tsp red chili powder
For Curry:
2 tbsp oil or ghee
1 bay leaf
1 cinnamon stick
2-3 cloves
2-3 cardamom pods
1 tsp cumin seeds
2 onions, finely chopped
2 tomatoes, pureed
1 tbsp ginger-garlic paste
1 tsp red chili powder
1 tsp coriander powder
½ tsp turmeric powder
1 tsp garam masala
1 cup water
Fresh coriander leaves for garnish
Instructions:
Marinate the Mutton:
Mix the mutton with yogurt, turmeric, red chili powder, ginger-garlic paste, and salt.
Let it marinate for at least 1 hour (overnight for best results).
Cook the Masala:
Heat oil or ghee in a pressure cooker or deep pan.
Add bay leaf, cinnamon, cloves, cardamom, and cumin seeds. Sauté until fragrant.
Add chopped onions and cook until golden brown.
Add ginger-garlic paste and sauté until the raw smell disappears.
Add tomato puree, red chili powder, turmeric, and coriander powder. Cook until oil separates.
Cook the Mutton:
Add marinated mutton and cook on high heat for 5-7 minutes, stirring occasionally.
Pour 1 cup water, cover, and cook until mutton is tender.
Pressure cooker: Cook for 5-6 whistles on medium heat.
Pan cooking: Simmer for 40-50 minutes, adding water as needed.
Final Touch:
Add garam masala and mix well.
Garnish with fresh coriander leaves.
Serve:
Enjoy hot with rice, naan, or roti.
