Nailed it. Super easy.
I have been experimenting with adjusting the seasoning when we just want boiled shrimp for salads, or dipping in cocktail sauce. Typical Cajun seasonings are too overpowering. Plus. The whole issue of the shrimp cooking for less that 3 minutes and not absorbing enough. I've gotten pretty good at the whole boiling/ice bath thing... but what a pain...
Since shrimp cook about 8 times longer in this Sous vide recipe. For about two pounds of large, deheaded shrimp, I used 1/8 of the normal amount of seasoning. About 1/2 cup of Zaterans Pro Boil powder, and 1/4 cup Old Bay. I added a 1/4 stick of butter to the bag, just becasue.
Set Sous Vide to 135 (gonna try 140 next time).
And cooked for 25 minutes. You can hold it for up to an hour before the shrimp get mushy... way more forgiving that the whole 2 to 3 minute normal boiling.
Might try this method for a low country boil next time.
