🍆🌿 Avarekalu Brinjal Curry (Hyacinth Beans & Eggplant Curry)
📝 Ingredients:
Avarekalu (hyacinth beans) – 1 cup (boiled)
Brinjal (small purple or green) – 4 to 5 (cut into cubes)
Onion – 1 medium, finely chopped
Tomato – 1 medium, chopped
Tamarind pulp – 1 tbsp
Jaggery – 1 tsp (optional)
Mustard seeds – ½ tsp
Cumin seeds – ½ tsp
Curry leaves – 8–10
Turmeric powder – ¼ tsp
Red chili powder – 1 tsp
Coriander powder – 1 tsp
Sambar powder or garam masala – 1 tsp
Salt – to taste
Oil – 2 tbsp
Water – 1½ cups
Fresh coriander leaves – chopped, for garnish
🍳 Instructions:
Cook the Beans:
Boil avarekalu until soft (pressure cook for 2–3 whistles if using dried ones).
Sauté the Base:
Heat oil in a pan. Add mustard and cumin seeds. Let them splutter.
Add curry leaves, then chopped onions. Sauté till translucent.
Add chopped brinjal pieces and cook for 5 minutes.
Add Spices & Tomatoes:
Mix in turmeric, red chili powder, coriander powder, and salt.
Add tomatoes and cook till soft.
Add Beans & Tamarind:
Add cooked avarekalu, tamarind pulp, jaggery, and water.
Cover and simmer for 10–12 minutes until brinjal is tender.
Final Touch:
Stir in sambar powder or garam masala. Simmer for 2 minutes.
Garnish with chopped coriander.
🥄 Serving Suggestion:
Serve hot with steamed rice, chapati, ragi mudde, or akki rotti.
