INGREDIENTS used in this video:

1 tablespoon extra virgin olive oil
1 garlic clove minced
1 ½ cups pearl or Israeli couscous
2 cups water See NOTES
1 ½ teaspoons kosher salt
Lemon Herb Vinaigrette:
¼ cup extra virgin olive oil
2 tablespoons lemon juice
Zest of 1 lemon optional
3 tablespoons fresh parsley chopped
1 - 2 garlic cloves minced
1 ½ teaspoons Dijon mustard
½ teaspoon kosher salt
¼ teaspoon pepper
¼ teaspoon crushed red pepper flakes
