INGREDIENTS
• 1 pound pasta, such as Bucatini or
Bucatini Lunghi
• 2/3 cup pepper-infused olive oil, such as Gargiulo
• 2 teaspoons freshly ground coarse black pepper
• 1 tablespoon unsalted butter, chilled
• 1 cup freshly grated Parmigiano Reggiano, plus more to serve
• 2 cups freshly grated Pecorino
Romano cheese
Bring a large pot of water over high heat. Sprinkle generously with salt and cook until just al dente . One minute less than package instructions.
Meanwhile, heat pan over medium heat. Add olive oil with peppercorns to the pan and heat for 30 seconds. Add the crushed black coarse pepper to the pan and toast about 1 minute . When pasta is ready, add pasta directly the skillet. Place on medium low.
Sprinkle with Reggiano and pecorino and add 1/2 cup of pasta water and toss well. Next add butter and toss pasta until mixed through. As needed for garnish, top pasta topped with cracked pepper and parmigiana.
Serves 6
