Today I am going to show you how to can peaches and make peach syrup with honey! Naturally Gluten Free to begin with!

This method uses all of the peach and you end up with 2 different products, which helps save money!
This is also a 'how to' for canning. Or rather the method that I follow.

*Please do your own research to find out which canning method is best for you!

I intended to make peach jelly, but it ended up being peach syrup. Which I am super excited about!!
I don't have a specific amount of peaches needed. I usually buy them in large quantities and make several different things. I was aiming for 12 quarts of peaches and ended up with 11. I also ended up with 6-12 oz. jelly jars and 2-8 oz. jelly jars of syrup.

I will say to have more jars ready than what you think you will need.

For the canned Peaches in peach juice:
Peaches (I think I used 25-35)
1-2 Lemons
Peel and remove the pit from peaches. Reserve peeling and pits. Slice in quarters. Measure 3 cups of peaches and mash with 12 cups water. Simmer to extract peach pulp. Strain and cool. Toss sliced peaches with lemon juice. Place sliced peaches in jars. Cover with peach juice. Process in a water bath.

For the Peach syrup:
Reserved peach peels and pits, and any leftover peach juice and strained pulp.
Enough water to come to the top of the peels/pits.

Bring to a boil, boil for 15-20 minutes. Strain while still warm.
Measure amount of liquid to determine amount of honey/sugar needed.

If using sugar use 3/4 cup of sugar per 1 cup of liquid
If using honey use 1/2 cup or less per 1 cup of liquid
1-2 Lemons
Simmer honey and peach liquid to jelly stage. Because I did not use pectin, my liquid never got to the jelly stage.
If using pectin, follow the instructions on the package.
