Ingredients:
For Kaleji (Beef Liver):
• Beef liver (outer skin removed, sliced)
• 2 peppers (1 red, 1 green capsicum), sliced
• 1 onion, chopped
• 1 tbsp garlic
• ½ cup oil
• 1 tbsp cumin powder
• 1 tbsp Chili flakes
• 1 tbsp Black pepper powder
• 2 tbsp tomato puree
• 1 tbsp sweet chili sauce
• Salt (to taste)
• Green chilies (to taste)
For Middle Eastern Yellow Rice:
• 1 glass rice (soaked 3 hours)
• 5 tbsp butter
• ½ cup dried onion (or fresh)
• 1 tbsp garam masala
• 1 tbsp black pepper
• ½ tbsp yellow food colour
• Salt (to taste)
• 2 glasses warm water
• Chicken cubes (to make stock)
🍳 Method of Preparation:
Kaleji
1. Heat oil, fry onion till light brown.
2. Add garlic, sauté 30 seconds.
3. Add liver + cumin, chili flakes, black pepper.
4. Cover and cook on low heat for 6–7 minutes.
5. Add tomato puree & sweet chili sauce, sauté 1 minute.
6. Add peppers, stir fry 3–4 minutes.
7. Add salt & green chilies, cover and cook 3 minutes.
✔️ Kaleji is ready.
Yellow Rice:
1. Heat butter, add soaked rice and dried onion.
2. Add garam masala, black pepper, food colour, sauté 1 minute.
3. Add salt.
4. Prepare warm chicken stock (2 glasses warm water + chicken cube).
5. Add stock to rice and cook on low heat till water absorbs.
6. Dum for 15 minutes.
✨ Serve kaleji with yellow rice — outstanding combo!
