yeolmu kimchi mulnaengmyeon
(Cold Noodles with Young Radish Kimchi)
1 pack instant mulnaengmyeon
1 pack yeolmu (young radish) kimchi
Eggs
Ice
tips:
Keep the water ice cold
Chill the broth in the fridge or freezer before serving
golbaengi muchim (spicy moon snail salad)
1 can moon snails
1 spring onion
1/2 onion
1/2 carrot
1/2 cucumber
A handful of sliced cabbage
4 tbsp Korean chili powder (gochugaru)
2 tbsp gochujang
1 tbsp soy sauce
1 tbsp balsamic vinegar
1 tbsp corn syrup (or syrup of your choice)
1 tbsp sugar
2 tbsp white vinegar
1 tbsp chopped or crushed garlic
1 tbsp roasted sesame seeds
A dash of black pepper
1 tbsp sesame oil (to mix with noodles)
200g Korean wheat noodles (somyun)
steamed Cabbage & rice with soy dipping sauce
A bunch of cabbage leaves
For the dipping sauce:
5 tbsp soy sauce
2 tbsp white vinegar
1 tbsp Korean chili powder
1 tbsp sesame oil
1 chopped spring onion
1 bird’s eye chili (or 1/2 regular chili), chopped
dotori mook (Acorn Jelly Salad)
1 part ground acorn powder
6 parts water
1/2 carrot
1/2 onion
A bunch of salad greens, chopped
For the sauce:
2 tbsp soy sauce
1/2 tbsp Korean chili powder
1 tbsp white vinegar
1 tbsp sesame oil
kongguksu (cold soybean noodles)
1 tofu block
900 ml water
1 tbsp peanut butter
5 tbsp roasted sesame seeds
200g Korean wheat noodles
1/3 cucumber, sliced
Cherry tomatoes, halved
Boiled eggs
Salt to taste
tips:
Keep the soybean broth cold — or add ice!
Barley Bibimbap
For the spicy kohlrabi mix:
600g sliced kohlrabi
1 tbsp crushed garlic
2 tbsp fish sauce
2 tbsp Korean chili powder (gochugaru)
1 tbsp sugar
1 tbsp white balsamic vinegar
2 tbsp apple cider vinegar
A pinch of salt, to taste
tips:
Soak barley in water for at least 30 minutes, or boil with 3 parts water to 1 part barley for 10 minutes before adding to the rice cooker.
If you’re not mixing with short-grain rice, avoid adding extra water.
Add a few drops of sesame oil to your bibimbap for extra flavor.
