A few of the Chinese noodle dishes that I’ve been wanting to make at home are ma jiang mian (sesame noodles) and dan dan noodles. The main ingredient for these noodle dishes is zhi ma jiang or Chinese sesame paste. You can typically find this paste at any Asian supermarket. However, when I did my own search, I could not find it anywhere. This sesame paste is made from ground toasted unhulled sesame seeds. If you’re wondering if it’s similar to tahini paste, the difference in their flavor is quite distinct. Tahini is made from ground hulled sesame seeds. Sesame seeds for tahini are either raw or only lightly toasted. Chinese sesame paste uses deeply toasted golden sesame seeds. Its flavor is quite similar to peanut butter!

► Chinese Sesame Paste Recipe
Ingredients:
1 ½ cups sesame seeds
¼ cup sesame oil
Tap water, for washing sesame seeds
Directions:
Wash sesame seeds using tap water and drain.
Heat pan on medium low heat. Add drained sesame seeds into the pan. Stir constantly to slowly toast the sesame seeds for about 15 minutes or until the sesame seeds are golden brown. Transfer toasted sesame seeds in a high-power blender. Blend for about 5 seconds to pulverize the sesame seeds. Add sesame oil and continue blending for about 3 minutes or until the mixture turns to a smooth paste. Store in an airtight container. The sesame paste can be refrigerated for about 1 month.
► Tips
After washing in water, drain the sesame seeds well to shorten the amount of time needed to toast them.
Be careful not to burn the sesame seeds when toasting.
You may use low heat to toast the sesame seeds but it will take you 30 minutes to complete the roasting.
