Mashed potatoes are a stable on our dinner table, all year long. I do however mix it up with different versions on the classic recipe - like this one for Garlic Mashed Potatoes.
The mashed potatoes themselves are based on my standard recipe, with Yukon Gold Potatoes, Butter, and Cream. They're delicious on their own, but the addition of some slow roasted garlic really puts them over the top. As the garlic roasts separately in the oven, the harshness fades, and is replaced with more mild, almost sweet garlic flavor that works perfectly with the potatoes.
