재료(2인분): 연어(구이용) 2조각, 쌀 1.5컵, 실파 3-4줄기, 양파 1/2개, 팽이버섯1/2팩 버터 2조각, 통깨 약간, 소금, 후추가루, 맛술 약간씩, 올리브오일 적당량
조림장: 간장 1큰술, 맛술 1/2큰술, 굴소스 1작은술, 물 1/4컵
만드는 법
1.연어는 큼직하게 썰어 소금, 후추가루, 맛술로 밑간을 한다
2.쌀은 씻어 불리고, 실파는 송송 썰고 양파는 채썰고 팽이버섯은 적당한 길이로 썬다.
3.팬에 올리브오일을 두르고 연어를 구워준후 따로 두고 조림장 재료를 넣어 끓으면 양파와 팽이버섯을 넣어 졸여준다.
4.졸인 양파와 팽이벗서을 한쪽으로 밀어두고 불린 쌀과 물은 넣어 밥을 짓는다.
5.밥이 뜸이 들때쯤 연어를 올려준다
6.실파를 듬뿍 뿌려주고 통깨를 뿌린후 섞어서 담는다
🛒 Ingredients (Serves 2)
2 pieces of salmon (for grilling)
1.5 cups of rice (washed and soaked)
3–4 stalks of scallions (chopped)
1/2 onion (thinly sliced)
1/2 pack of enoki mushrooms (cut into bite-sized lengths)
2 small pieces of butter
Sesame seeds, salt, pepper, cooking oil, and mirin (to taste)
🍶 Soy Glaze
1 tablespoon soy sauce
1/2 tablespoon mirin (or cooking wine)
1 teaspoon oyster sauce
1/4 cup water
🍳 Instructions
1. Cut the salmon into large chunks. Season with salt, pepper, and a splash of mirin.
2. Wash and soak the rice. Slice the scallions, onion, and enoki mushrooms.
3. In a pan with olive oil, grill the salmon until golden. Set aside. In the same pan, add the soy glaze ingredients and bring to a simmer. Add the onion and mushrooms and cook until slightly reduced.
4. Push the cooked vegetables to one side of the pan. Add the soaked rice and enough water to cook (adjust based on rice type). Begin cooking the rice over medium heat.
5. When the rice is nearly done and steaming, place the grilled salmon on top and let it finish cooking with the lid on.
6. Sprinkle with chopped scallions and sesame seeds. Gently mix everything together before serving.
