Look no further - this is the best recipe for Pineapple Jam!
This light, golden marmalade has a sharp, clean taste. You can prepare it totally clear or with a few shards of lemon peel hanging about in it.
For Orange Marmalade, please use the same method!
Cut up pineapples or use canned
If using fresh pineapple, I like to cut it up and sprinkle with sugar overnight.
Mash in food processor.
Measure the liquid.
In the big pot put:
454 grams or 1 pound of crystal sugar for each 20 ounces or 2 1/2 cups liquid.
1 tablespoon cinnamon, adjust according to your taste.
1 tablespoon nutmeg, adjust according to your taste.
Bring to boil to setting point, 20 to 30 minutes. See video if not sure.
Some people as pectin or some such, but I don't need to.
Have your jars boiling for steralizing and put the Jam in the jars.
