Walnut Methi Thecha Noodles
Servings - 3
INGREDIENTS
Water - 800 milliliters
Salt - 1 teaspoon
Oil - 1 tablespoon
Noodles - 120 grams
Oil - 1 tablespoon
Cumin seeds - 1 teaspoon
Garlic - 1 tablespoon
Green chili - 2 tablespoons
Walnuts - 40 grams
Fenugreek leaves - 40 grams
Coriander - 3 grams
Salt - 1/2 teaspoon
Oil - 1 tablespoon
Garlic - 1 teaspoon
Reserved noodle water - 100 milliliters
Parmesan cheese - 1 tablespoon
PREPARATION
1. Boil 800 milliliters water in pan, add 1 teaspoon salt, 1 tablespoon oil, and 120 grams noodles. Boil for 5 - 7 minutes.
2. Remove from heat, strain the noodles, and reserve noodle water for later.
3. Heat 1 tablespoon oil in a pan, add 1 teaspoon cumin seeds, 1 tablespoon garlic, and 2 tablespoons green chili. Sauté for 30 seconds.
4. Add 40 grams walnuts and Sauté for few seconds.
5. Add 40 grams fenugreek leaves, 3 grams coriander, and 1/2 teaspoon salt. Cook for 4 - 5 minutes over medium heat.
6. Remove from heat, transfer the mixture into a mortar, and crush it using a pestle. Keep aside.
7. Heat 1 tablespoon oil in a pan, add 1 teaspoon garlic and sauté for 30 seconds.
8. Add the crushed thecha and cook for 1 - 2 minutes.
9. Pour in 100 milliliters reserved noodle water and stir well.
10. Add 1 tablespoon parmesan cheese and boiled noodles. Toss well to combine and remove from heat.
11. Transfer the prepared thecha noodles to a serving plate and garnish with extra parmesan cheese.
12. Serve hot.
