Chicago superstar butcher Rob Levitt left Butcher & Larder where he specialized in providing customers with a large selection of quality beef, pork, and chicken to take over the kitchen and butcher operations of Chicago’s legendary Publican Quality Meats in the Fulton Market.
Shortly after arriving to PQM, Rob added two DRYAGER UX1500 PRO dry aging cabinets to his operation. His initial goal was to allow for more storage in the walk in cooler while showcasing to the public the pieces of meat he was dry aging. He soon noticed that he was able to trim a lot less product, while achieving a higher consistency in results. Now he was also having more conversations with their customers about the origin of the meats and the dry aging process, ultimately leading to doubling their steak sales.
