Today was an amazing day shopping for pumpkins and treats with the family. I was inspired by the smell of cinnamon to bake apple dumplings. These crispy baked treats are like an apple cobbler, and an apple pie rolled into one. This is gonna be good!

INGREDIENTS
4 Granny Smith apples
1 pie crust dough
1/3 cup granulated sugar
1 1/4 to 1 1/2 tsp ground cinnamon
pinch of salt
2 Tbsp unsalted butter for apples
1/2 cup lemon-lime soda
SYRUP
1/2 cup water
1/2 packed cup light brown sugar
1 Tbsp unsalted butter
1 1/2 tsp vanilla extract
