1/4 cup olive oil or vegetable oil
1 medium onion, - finely chopped
1 small green bell pepper, - finely chopped
4 cloves garlic, - pressed or finely chopped
1.5 tsp paprika
1.5 tsp cumin
1.5 tsp salt - (or to taste)
1/4 tsp black pepper - (or to taste)
1/8 tsp cayenne pepper - (optional) OR
2 chili peppers - (optional)
1 bay leaf
2 tbsp finely chopped parsley
2 tbsp finely chopped cilantro
For Garnish (Optional)
4 eggs - (free range or beldi eggs are preferred)
green pitted olives - (to taste)
fresh parsley or cilantro sprigs
For Garnish
6 eggs - (free range or beldi eggs are preferred) FOR 3 PERS
